Cheeseburger Soup
Hearty and comforting, this soup is a warm hug in a bowl on a cold winter day. Creamy cheeseburger soup is full of ground beef, vegetables, and lots of melted cheese, making a rich, thick, and satisfying bowl.
1/2 to 1 pound of ground beef
3/4 c. chopped onion
3/4 c. chopped carrots
4 cups diced peeled potatoes
1 tsp. dried basil
1 tsp dried parsley
3 cups chicken broth
1-1/2 cups of Fagan Family Farm milk
1-1/2 cups of shredded sharp cheddar cheese
3/4 tsp salt
1/2 tsp pepper
To thicken the soup: whisk 1/2 c of flour with 1 c of milk
Brown the ground beef and drain. In your soup pot, bring the chicken broth to a boil and add onion, carrots, potatoes, basil, parsley, salt, and pepper. Cook until veggies are tender, and then add the ground beef. Reduce the heat to a simmer. Add the milk and cheese. Cook and stir until the cheese melts. Reduce the heat to low and thicken the soup by whisking in the flour and milk mixture.
