Southwest Stuffed Burgers

 

I love food on the grill and I especially enjoy a good juicy hamburger.  My family requests these Southwest Stuffed Burgers quite often.  It is a little different than your traditional hamburger because it has a taco-flavored filling. They are super easy to make, and your family will really enjoy them.

Southwest Stuffed Burgers

1 1/2 lb. Fagan Farm ground beef

1/4 c. mayonnaise, divided

1 pkg. taco seasoning mix

1/2 c. colby or any other cheese of your choice

1/4 c. salsa, divided

Mix meat, 3 Tbsp. of the mayo and the seasoning mix; shape into 12 thin patties. Combine cheese and 2 Tbsp. of the salsa; spoon over 6 of the patties. Cover each with one of the remaining patties; pinch edges together and seal. (Note: Stuffed patties can be covered and refrigerated up to 4 hours before grilling. I think they hold together better if refrigerated before grilling, but this is optional.)

Grill 7 min. on each side or until cooked through. Meanwhile, combine the remaining 2 Tbsp. salsa and remaining 1 Tbsp. mayo.

Place lettuce, tomatoes, and burgers on bottom halves of buns; top with salsa mixture. Cover with top buns.

Makes 6 hamburgers
