Spinach Alfredo Lasagna

Note: You can substitute the pork with shredded chicken and you can replace ricotta with cottage cheese.

Ingredients:

12 oz. package of lasagna noodles

1 lb. pork sausage

2 cups of fresh spinach, chopped

1 jar of Alfredo sauce (Click here for my homemade sauce recipe.)

1/2 teaspoon salt

1/4 teaspoon pepper

1 egg

1 (15 oz) carton ricotta

2 cups shredded yellow cheese

1/2 cup Parmesan cheese

1 cup shredded mozzarella cheese

Step 1: Cook the noodle and brown the sausage.

Step 2: Drain the noodles and set aside. Drain the sausage.

Step 3: Add spinach, Alfredo sauce, salt and pepper to the meat.

Step 4: In a bowl combine the ricotta, egg, yellow cheese and Parmesan cheese. Mix well.

Step 5: In a 13x9 dish, layer a third of the sausage mixture, noodles and cheese mixture. Repeat layers twice.

Step 6: Top with mozzarella cheese and bake at 350 degrees for 45 minutes. Before cutting, let it stand for 5-10 minutes.

Enjoy!
